INGREDIENT

Tourlami All Purpose Butter
Boiron Passionfruit Puree
Water
Sugar
Cornstarch
Valrhona Passionfruit Inspiration
Melted 3/4 way
Agar Powder
Salt
Lemon Zest

METHOD

1. Add a little water to cornstarch to make a slurry

2. Add slurry, passionfruit puree, remaining water, sugar, salt, zest, and agar to a pan. Bring to a boil, and boil 5 minutes

while gently whisking.

3. Pour over chocolate and butter. Immersion blend until smooth.

4. Place plastic directly over the top, and allow to chill overnight.

NOTES

  • This can be piped, used in tarts, and cakes.

  • Give a gentle whisk before using to make creamy.
